Life is busy and schedules do not always allow the time necessary to cook a full meal after getting home from a productive day out. Fast food is convenient, but it is not affordable or nutritious enough to eat on a daily basis. There are many alternatives to eating a hearty and healthy meal without sweating over the hot stove for hours on end. Anyone with a crock pot can get a dinner going before leaving for work with one of these delicious slow cooked soup recipes.
1. Thai Chicken Soup
Thai chicken soup in a slow cooker is made without using any other dish. The vegetables can be substituted or adapted to fit any particular taste. However, it is important to make sure that the lime and peanut butter are left in the recipe. These ingredients are what make the spiciness of the curry stand out.
- 1 heaping tablespoon minced fresh ginger
- 1 C thawed frozen peas
- 1 Tbsp lime juice
- 2 Tbsp light brown sugar
- 2 Tbsp creamy peanut butter
- 1 red bell pepper, seeded and then cut into ¼ inch slices
- 1 onion, sliced thinly
- 2 Tbsp red curry paste
- 2 – 12 oz. cans of coconut milk
- 2 cups store-bought or homemade chicken stock
- 2 Tbsp fish sauce
- 1½ lbs chicken breasts cut into 1½ inch chunks
- A bit of cilantro for a garnish
- Enough cooked white rice for each serving
In the slow cooker mix together the red curry paste, chilled canned coconut milk, choice of chicken stock, fish sauce, light brown sugar, and creamy peanut butter.
Then, add the cut up chicken breast, fresh red bell pepper, sliced onion, and ginger seasoning to the sauce. Cover the slow cooker and set it to cook for 4 hours on high.
Next, add in the thawed peas and cook everything for another 1/2 hour. After that, add the fresh-squeezed lime juice.
Serve the soup with cilantro and white rice to make it a complete meal. This recipe serves 6 as a meal or 8-10 if used as a side dish.
