Pesto Chicken Thighs
This chicken recipe only calls for a few ingredients, making it not only easy to prepare, but also affordable. It serves up to 8 people and makes a great leftover dish the following day.
- 3 lbs. boneless skinless chicken thighs
- 2 Tbsp store bought or homemade chicken broth
- 1 – 6.25 oz. jar basil pesto
- 1/2 tsp. table salt
- 1/4 tsp. black pepper
Season the chicken thighs with table salt and black pepper and put in the slow cooker.
In a separate dish combine the pesto and chicken broth. Add the mixture to the crock pot and cover the chicken evenly.
Cover and cook on high heat for at least 4 hours.
This meat can then be served as is or to suit any individual personal taste preference. One idea is a Bruschetta-topped style including tomatoes, onion, basil, and vinegar served with rice or noodles.
